HoReCa Academy hosted an informative and interactive seminar titled “Eggcellence: The Complete Egg Seminar” in New Garden Town, Lahore, in strategic partnership with the Chefs’ Association of Pakistan (CAP) and COTHM Pakistan, with the participation and technical contribution of Happy Hens Poultry Farm (HHPF).
The educational seminar brought together culinary students, aspiring chefs, and industry professionals for an in-depth learning experience focused on egg selection, quality evaluation, freshness, handling, and professional culinary applications.
The initiative aimed to strengthen the connection between culinary education and the food production industry by giving participants practical knowledge about one of the most widely used ingredients in professional kitchens.
Exploring the Science Behind Different Eggs
A key focus of the seminar was to address common misconceptions surrounding eggs, particularly the perception that brown eggs are automatically of higher quality than white eggs.
Participants were introduced to and engaged in comparative evaluation of Classic White Eggs, Lohmann Brown Eggs, and Desi Eggs. Industry experts explained how factors such as hen breed, farm management, production practices, and handling influence characteristics including shell quality, yolk composition, albumen firmness, freshness, and culinary performance.
The session encouraged future culinary professionals to make ingredient choices based on quality, characteristics, and intended application rather than appearance or common assumptions.
Practical Learning from Farm to Kitchen
One of the most engaging components of the seminar was a live showcase featuring different egg samples along with live chicks and young birds. The demonstration allowed participants to establish a direct visual connection between poultry breeds and the eggs they produce.
The practical training further covered professional methods for freshness testing, safe egg handling, storage, and contamination prevention. Participants also learned how to select suitable eggs for different culinary requirements, including baking and specialty dish preparation.
The hands-on approach gave culinary students an opportunity to understand how decisions made at the production and sourcing stages can ultimately influence performance in the professional kitchen.

During the seminar, Happy Hens Poultry Farm highlighted its PCSIR-certified production standards, emphasizing the importance of consistent quality, proper cold-chain management, food safety, and reliable supply for professional food service operations.
The discussion demonstrated the importance of collaboration between educational institutions, culinary professionals, chefs’ associations, and food producers in developing a more informed and skilled hospitality workforce.
