Pastry Chefs Explore Judging Criteria and Scoring Strategies Worldchefs Pastry Arts Competition Seminar

Understanding how culinary competition entries are evaluated was a key focus of the Worldchefs Pastry Arts Competition Seminar held at Pearl Continental Hotel, Lahore, through a collaboration between the Chefs Association of Pakistan (CAP) and COTHM Pakistan.

Led by international pastry chef and Worldchefs competition judge Gilles Renusson, the seminar brought together a large number of chefs to explore judging criteria, competition standards and practical approaches to improving performance in pastry competitions.

The training drew on perspectives associated with Worldchefs Certified Judges and award-winning competitors, helping participants understand both the evaluation process and the preparation required to deliver competitive entries.

A strong competition performance depends on more than producing an impressive pastry creation. Chefs must understand the relevant assessment criteria and pay attention to technical execution, consistency, presentation and the overall quality of their work. Understanding these expectations can help competitors make informed decisions during preparation and allocate their time effectively.

Participants also gained insight into best practices in the competition kitchen, where organisation, hygiene, preparation and time management are essential. A structured workflow can help reduce avoidable mistakes and allow competitors to focus on the details that influence the quality of their final products.

Chef Gilles Renusson led the learning experience, bringing his professional background in pastry arts and competition judging to the discussion. His leadership helped place the emphasis on the connection between technical ability, professional discipline and the standards expected in competitive culinary settings.

The seminar provided an opportunity for chefs to strengthen their understanding of competition requirements and consider practical ways to improve their results. Learning from both judging and competitor perspectives can help participants approach future competitions with greater preparation and a clearer understanding of performance expectations.

Organised through CAP and COTHM Pakistan’s collaboration, the seminar highlighted the importance of specialised training in developing culinary talent and encouraging continuous professional improvement.

The event reinforced the value of knowledge-sharing initiatives that equip chefs with the skills and understanding needed to pursue excellence in pastry arts.
