The Chefs Association of Pakistan (CAP), in collaboration with COTHM Pakistan, organised a Pastry Arts Competition Seminar at Pearl Continental Hotel, Lahore, bringing together a large number of chefs and culinary professionals for specialised training in pastry competition techniques and professional standards.
International pastry chef and Worldchefs competition judge Gilles Renusson led the seminar, guiding participants through the technical knowledge and preparation required to perform successfully in competitive culinary environments.

The seminar offered participants insights from the perspectives of Worldchefs Certified Judges and award-winning competitors, providing a broader understanding of how competition entries are assessed and what chefs can do to improve their performance. Key learning areas included judging criteria, best practices in the competition kitchen and techniques for achieving higher scores.
For pastry chefs, culinary competitions demand more than creativity and attractive presentation. Competitors must demonstrate technical precision, consistency, effective time management and a clear understanding of the standards against which their work is evaluated. Knowledge of judging criteria can help chefs identify strengths, recognise areas for improvement and prepare more strategically for competitions.

The seminar also highlighted the importance of maintaining discipline and organisation in the competition kitchen. Efficient preparation, careful handling of ingredients, attention to detail and effective workflow management can all contribute to a stronger performance under time constraints.
Chef Gilles Renusson’s leadership brought an international professional perspective to the learning experience, helping participants explore the expectations associated with competitive pastry arts. The involvement of judges’ and award-winning competitors’ perspectives further connected technical practice with the realities of competition and evaluation.

The strong participation reflected the interest of Pakistan’s culinary community in specialised professional development and opportunities to strengthen pastry skills.
Through this collaboration, CAP and COTHM Pakistan highlighted the value of structured training in preparing chefs for culinary competitions and supporting the development of professional standards across the hospitality industry.
