The second day of the Pastry Arts Competition Seminar at Pearl Continental Hotel, Lahore, continued the professional learning initiative organised through a collaboration between the Chefs Association of Pakistan (CAP) and COTHM Pakistan, with international pastry chef and Worldchefs competition judge Gilles Renusson leading the seminar.

The two-day initiative brought together a large number of chefs and culinary professionals seeking to strengthen their understanding of pastry competition standards, technical practices and professional performance. The programme drew on perspectives associated with Worldchefs Certified Judges and award-winning competitors, helping participants explore the requirements of competitive pastry arts from multiple professional viewpoints.

Day two continued to emphasise the importance of understanding judging criteria, applying best practices in the competition kitchen and identifying practical ways to improve competition scores. These areas are essential for chefs preparing to participate in culinary competitions, where technical execution, consistency, presentation and time management can influence overall performance.
Under Chef Gilles Renusson’s leadership, the seminar highlighted the connection between technical preparation and effective competition strategy. Understanding how entries are evaluated can help chefs plan their work more carefully, maintain consistency and pay closer attention to the details that distinguish a professional competition entry.

The programme also underscored the importance of organisation and discipline in the competition kitchen. Efficient workflow, preparation planning, proper handling of ingredients and careful execution help chefs manage time constraints while maintaining the quality of their creations.
The participation of chefs from the culinary community reflected the value of specialised training and continued professional development. Learning from international expertise and the experiences of successful competitors can help aspiring and practising pastry chefs refine their techniques and build confidence for future competitions.

The collaboration between CAP and COTHM Pakistan also highlighted the role of professional associations and culinary education institutions in strengthening industry knowledge and supporting talent development. Such initiatives create opportunities for chefs to expand their understanding of professional standards and engage with specialised areas of culinary practice.
As the seminar concluded its second day, the programme reinforced the importance of continuous learning, technical excellence and preparation in pastry arts. It also highlighted the value of connecting Pakistan’s culinary professionals with international competition knowledge and industry experience.
